Beet & Pineapple Smoothie

Summer is the ideal time to take charge of your health and begin to eat food that sustains and protects you. When fruit and vegetables are ripe and in season, it’s easy to feel how nourishing they can be. Since The Plant Pledge was published (back in April) I’ve had the pleasure of being invited to area libraries and elementary schools to read the book and help instill positive values about the importance of proper nutrition to children and families. I am grateful for the opportunity to be able to share the beauty of sustainable living with so many local people in our area. This month, I will be at the Reading Public Library on Tuesday, July 18, 2017 at 4:00 pm for a program that is free and open to the public. I invite you to join me as I share the children’s book as part of their Garden Sprouts program, where children and families learn how to start their own container gardens, are encouraged to participate in the Reading Public Library’s own garden, and educated about how to use fresh fruits and vegetables in healthy recipes.

In an effort to incorporate additional fruits and veggies into the daily routine, I especially like this pineapple and beet smoothie for those hot, humid days of summer. The earthy taste of the beets is disguised by the sweet pineapple making it a little easier on the palate for families and children who are new to plant-based nutrition. Keep in mind that while national health authorities recommend eating five or more servings of fruits and vegetables each day, much of the research still indicates that it is much more beneficial to eat the whole fruit or vegetable than to pulverize it into a smoothie or juice. Consuming the whole fruit or vegetable ensures proper metabolism of all the vitamins, minerals, and phytonutrients. This is not the case when we break down the fibers by blending it. All that said, making a smoothie at home is still far better than snacking on junk food.

Pineapple and Beet Smoothie
2 cups of ice
1 cup of coconut milk
1 whole pineapple
1 cucumber
1 beet, skin cut off
1 Tbsp. freshly grated ginger
