The “Elevate Your Dinner Party” Appetizer

Elevate your dinner party appetizerI try hard to stay true to my promise for healthful, divine recipes, and this one will be sure to elevate your dinner party to the next level! Sometimes I get so wrapped up in finding kid-friendly recipes that I forget to indulge in that place where I find peace and harmony. For anyone with children, sometimes peace can be found simply from a clean house, even if it’s just for an hour. Other times, I find peace simply when I close my eyes and remember my honeymoon; just my husband and I, young, with no real responsibility except maybe to show up at work. While we were on our honeymoon (with no cell phones, away from the hustle and bustle of the busy world we live in) I’m remembering a simpler time, just us the two of us, the crystal blue ocean, the warm sunlight, and an abundance of peace and harmony. Then I open up my eyes to two energetic kiddos (nearly 10 years later) where it isn’t often that we experience those “adult” dinners with just the two of us in a peaceful, harmonious setting.

For some reason, when I bit into this appetizer, I tasted a sophistication that a kid-friendly dish simply cannot appreciate. I closed my eyes and instantly found myself back in that peaceful place with my husband, if just for a moment, remembering what it feels like to enjoy an adult dinner with a cosmopolitan palate and a glass of wine. This recipe works perfectly for an adult dinner party, or for a special occasion where it’s just you, your partner, and some dim lights! Ingredients
1 Cup Cashews
1/4 Cup Chopped Fresh Basil
1/2 Cup Kalamata Olives, Pitted
1/2 Cup Artichoke Hearts (about 4)
1/2 Cup Sun Dried Tomatoes (about 6)
2 Large Cucumbers

Preparation
Wash thoroughly and slice cucumbers to about 1/2 inch thick. Hollow out the centers almost to the bottom but not quite, and set aside.

Combine all remaining ingredients in food processor and pulse lightly to a chunky consistency. Fill cucumbers. Can be served cold or at room temperature.
